Alexander Abu is a Research Fellow in the Department of Animal Science. He specialized in Meat Science and Technology. He has over five years of research and teaching experience in Meat Science. He is the supervisor of UDS Meats Unit and also the TTFPP coordinator of the Department of Animal Science. Mr. Alexander Abu has supervised several undergraduate students in the field of animal and meat science. He has served the faculty by providing instructions in Animal Products and Handling, Anatomy and Physiology of farm Animals and Animal Biotechnology. He has been involved in the development of novel meat products such as “dawadawa” beef sausages, “prekese” beef sausages etc. His current research interests are exploitation of locally available spices in meat processing, usage of underutilized crop species as potential meat extenders, value addition to abattoir waste in the meat industry and animal welfare. He is a member of the Ghana Animal Science Association and University Teachers Association.
